2018 – Week 6 of your Nebraska Box June-July Session!

Thanks to everyone who has supplied us with feedback throughout the session – keep it coming!  A few of you let us know the lettuce from last week was bolted and bitter-tasting, and we really appreciate you letting us know, so we can chat with our farmers and make improvements each week. 

Whether you’re thrilled,satisfied, amused, confused, unhappy, or just want to say hey or share recipes, don’t hesitate to be in touch!  We’re constantly brainstorming ways to improve and fine-tune our program.

Most of the items in your Nebraska Box have been rinsed on farm. However, we do recommend washing all the produce before eating. If you can hold off for those extra couple of minutes before diving into all the goodness…

Green Cabbage

Cabbage is perhaps one of the most perfect foods, in my opinion. It’s totally willing to wait for you in the frig for amazingly long periods of time! I am partial to cole slaws, but if you want to cook it, I also really love slicing it into thick rounds or wedges, a little olive oil, salt and pepper and throwing it under the broiler for a few minutes until it’s nice and charred.

Green beans

Some of my very favorite memories are of sitting on my grandparents’ back porch snapping the green beans we were about to eat that night. It still is a lovely way to relax for a few minutes before preparing them to be gobbled up!

Onions

I seriously don’t know how I could cook without onions. 

Sweet corn

Aren’t you so thrilled to be getting corn again? I know I am loving it. Summer in Nebraska just wouldn’t be complete without corn and this corn is the best! While you are snapping your beans go ahead and shuck your corn and you will devouring a summer feast in no time.

Collards

You can cook the living daylights out of these greens and they will be super tasty. Or, try them out raw in place of a tortilla in a wrap or burrito. So versatile. So delicious.

Cherry tomatoes

These gems are bursting with summer flavor and I’m so excited that tomatoes are coming into season!

Ground Pork

I’m thinking pork tacos. If you haven’t eaten up all your cabbage, tomatoes, and onions, they would make perfect toppings for some tacos 🙂

Half and half
Grass-fed, A2 Half & Half made from organic Jersey milk and cream. Of course this would be a good start to your day in your morning coffee. Otherwise, the possible uses are endless! Your pasta sauce would certainly benefit from a splash or two. Cakes to quiche! This half and half is all and all good.
